Saboodana Kheer/Pearl Tapioca Pudding Recipe




Ingredients:

  • Milk - 4 cups
  • Saboodana/Pearl Tapioca - 1 tbsp
  • Sugar - 3/4 cup
  • Cardamom powder - 1/4 tsp
  • Water - 1 cup
  • Cashew - 1/4 Cup
  • Almonds - 1/4 Cup 
Method:
  • Wash and drain saboodana, soak in water for 10 minutes.
  • Heat water, Add saboodana, bring to a boil while stirring.
  • Reduce heat, simmer for 5-6 minutes.
  • Add milk, bring back to a boil.
  • Simmer for 5 minutes. Add sugar, cardamom.
  • Stir occasionally, simmer till saboodana  is cooked, but not mushy.
  • Check by pressing it between thumb and finger. It should flatten on pressing. Garnish with Almonds and Cashews.
  • Serve with Puri.
